This is my first post of a cafe in my hometown. Partly because I don't actively search for cafes to go to in Singapore as compared to when I am overseas, but that doesn't mean we do not have quality bakes here. In fact there are so many cafes popping up in Singapore every month that are waiting for us to explore!
Replacing the Brotherbird x Stateland cafe famous for its innovative soft serve ice creams and mochi donuts, the newly launched Brotherbird Coffeehouse takes over the previous cafe space in a 2-storey shop at 32 Bali Lane in Bugis. Brotherbird Coffeehouse is back with an expansion to its bakes menu and well curated coffee and beverage offerings.
The interiors of Brotherbird Coffeehouse @ Bugis is kept clean and simple with whitewashed walls and some greenery brightening up its space. There is a small corner on the 1st floor with a high table, while most of the other seats are located on level 2 if you choose to have your bakes there.
We got a seat next to the windows on the upper floor and I loved how the natural sunlight filters in and created the shadows on our bakes. Isn't it so pretty?
I have been thinking of them croissants all week and decided that I have to make a trip down after checking their bakes line-up. We ordered the Twiced baked Strawberry Daifuku and Ferrero Rocher Croissants. I loved how they incorporated mochis into their croissants. I think we can all agree that all Singaporeans love muah chee and anything which has a similar consistency to it. The chewy layer of glutinous rice and pureed strawberry fillings were a delight to eat while the Ferrero Rocher croissant had a decadent nutella filling, although you can only taste the buttery nature of the croissant skin when you have it on its own.
Overall, the golden brown croissants are crisp with flaky layers and they have a delightful crackle when you slice into them. Don't they look so good with the generous fillings inside? My mochi dreams came true with the Strawberry Daifuku one.
Never boring, Brotherbird Coffeehouse changes its line-up regularly with creative additions so be sure to check on their Instagram updates. If you love all things mochi or fancy a churros flavoured croissant or simply a good old plain almond or chocolate one, head over and get your hands on a crisp buttery croissant. Be sure to be there early otherwise the flavours that you've been eyeing may just run out. We reached there at 12pm on a weekend and were afraid that some of the flavours might have already been sold out, but thankfully the full range of bakes were still available.
